Hoisin sauce is a thick, sweet, dark sauce from Chinese cooking, made mostly from fermented soybeans, sugar, vinegar and garlic. A 20 g serve (about a tablespoon) scores 3.5 on our scale, which sits on the gentler side — most of that is wind, from the garlic, the soybeans and its high sugar (around 27 g per 100 g). If you'd like a gentler sauce for a stir-fry or glaze, you could try oyster sauce (1.3) or soy sauce (1.0) instead. Or cook with those and put the hoisin on the table, so everyone else can add their own.
